crispy potato recipe.

A great addition to a BBQ or bring-your-own dinner party. Cheap, easy, and certainly a crowd-pleaser!

  • 400g baby potatoes

  • Tbsp olive oil

  • Garlic salt (regular salt also works)

  • Chopped rosemary

  • Pepper


Step 1

Preheat the oven to 180C/200C fan oven. Cut the baby potatoes into smaller pieces (roughly half or quarter) and boil for five minutes until you can put a fork in them. Drain and leave for a minute to steam dry off. Shake the saucepan to break them/fluff them up a bit, then transfer to a baking tray, spooning out any mashed potato left behind from shaking.

Step 2

Crush them slightly - it works well if you use the back of a big spoon or the bottom of a drinking glass. The more mashed, the crispier the potatoes will be. Toss in your olive oil, salt, chopped rosemary and pepper. Cook for 30 minutes or until golden and crispy.
