What better way to get your caffeine fix than a big ol' slice of coffee cake! Oh, and it's delicious too…

Make a large cake to share with family and friends, or divide it into cupcakes for an on-the-go snack.
Serves: 10-12
Prep Time: 15 minutes
Cook Time: 30 minutes
ingredients.
170g baking butter
170g caster sugar
3 eggs
170g self-raising flour
1 tbsp instant coffee
1 tbsp icing sugar
50g walnuts
method.
Step 1
Preheat the oven to 180C/200 fan. Put the coffee into a small bowl or mug and pour over 1tbsp of boiling water; leave to dissolve and cool. Add the butter to a large bowl and microwave for 5 seconds if firm. Add the butter and cream together. Add the eggs and mix until a thicker texture.
Step 2
Add the flour and most of the cooled coffee, mix until a smooth mixture is formed. Add to a buttered cake tin or the cupcake cases and put in the oven for 30 minutes or until golden on top. Leave to cool on a wire rack.
Step 3
Mix together the rest of the cooled coffee and icing sugar. You may have to adjust the amount of icing sugar depending on how much coffee you reserved. Keep adding icing sugar until the mixture isn't too runny but still easy to spread. Add to the cooled cake or cupcakes. Before the icing has set, sprinkle crushed walnuts onto the cake.
