Because it wouldn't be lockdown without banana bread.
125g butter (melted until soft)
1 medium egg
150g caster sugar
190g self-raising flour
60ml milk (non-dairy milk works also)
2 ripe bananas
1sp vanilla extract
Preheat oven to 180C/160C fan oven.
Mix together the melted butter and sugar.
Crack in the egg and whisk.
Add the flour and stir until stiff (you will feel resistance at this stage), add the milk until easy to stir (add more if needed). Add the vanilla extract.
Chop up the banana into small chunks and use an electric whisk to mix into the mixture. If you don't have a whisk then pre-mash the banana with the back of a fork and add the mixture - the banana might not mix completely but you'll haves crummy banana chunks.
Tip into a rectangular loaf tin which has been greased with butter or lined with baking paper. Smooth with a spatula to fill the sides and flatten the top.
Bake for 40 minutes or until golden brown and cooked through.
Serve with a cup of tea for the best taste!
